Whey derives from the cheese production containing all the noble proteins of milk. The efforts are directed to isolate these proteins to exalt their properties.

The Belladelli productive process of cheese and related to whey as well, allows the protein to remain intact (native) with its molecular structure.

ALPHA-LACTALBUMIN

This protein contains a high-quantity of Tryptophan, the precursor of Serotonin (neurotransmitter), which improves relaxation and sleep.

Oral consumptions of Alpha-lactalbumin are actually able to increase the plasma level of tryptophan, so its celebral collection and the successive celebral synthesis of serotonin.

SEROTONIN

It is rich in cysteine which play a significant role in strengthening the oxidative capability during a physical effort, influencing the performance and reducing the strain. The high content of ramified chain amino acids (leucine) stimulates the muscular protein synthesis and helps to prevent the sarcopenia during aging. Moreover, serotonin practices multiple effects in appetite control, mood, sleep, enhancing the cognitive performance and the ability to manage stress.

LACTOSE

In whey, lactose constitutes about the 70% of dry mass and it could be isolated by concentration and consecutive crystallization.

Lactose is an excellent ingredient for both confectioneries and bakeries.
